At the time of writing this article, the only way to book in an appointment or service for a client is to go through the booking process as if you were the client. This means to say that you would select a date and time and enter in their name, email, etc into the booking form that proceeds. This way, the client would receive the booking notification and all reminder notifications that you have set up for that appointment or service.
